Andy Carroll is my target man at Newcastle in the second season of FM2010. He's been playing well without scoring to many (scored loads in first few games) but I've just looked at his stats and they've fallen as in the screenshot. He's not been injured and plays nearly every game - can anyone think of any reasons this might happen?

Most of those red arrows are to do with technical skills. A lot of them are set piece related (corners, crossing, free kicks, corners, throws and penalties) or defensive (tackling, marking). I assume you're not training these particularly highly for him?
The only two slightly worrying ones are techinque and teamwork. You might want to check which training categories these are in and give him a little more training in that area.
I'm not a training expert, but I have noticed my own players go through lulls like this with their attributes. Usually it happens with players that I use the most. So tiredness might be a factor. More often than not they recover, but it's never nice to see those stats tumble.
As I said, the only two attributes which will actually affect him as a striker are team work and technique. So I wouldn't worry too much. Perhaps giving him a game or two off, or failing that giving him a bit of a rest in training every now and again, might help him get back on track?

It's totally fine to see rubbish Set Piece attributes decline in central players, it means it is freeing up CA for more useful attributes.
However I notice that you have been playing Carroll to exhaustion, his form has dipped and his goalscoring rate is down from 1 in 2.
A drop in form for a player that was playing right at their peak will result in a drop in ability, basically he has hit his peak for that season and unless you rest him up and get him back on form his attributes will reflect the fact he is no longer at his peak. That's how it works. Players playing well literally get better, players not playing so well any more literally get worse.
Look at how Patrice Evra has finished his last couple of seasons. Playing near every game of the campaign, he tends to finish the season a shadow of himself.
Carroll here has 11 Natural Fitness and 12 Stamina and has started 32 league games. It's no wonder he is dying off rapidly at the end of the season.
